The cuisine of the Lublin region is borderland cuisine — Polish, Ukrainian, and Jewish influences meet here. This is visible in the dishes: pierogi with bryndza, cebularze, krupnik, groats, potatoes. All simple, earthy, and deeply filling dishes.
1. Lublin Cebularz
Flat yeast dough with onion and poppy seeds — one of the most recognizable dishes of the region. Sold at markets and bakeries throughout the Lublin region. The best freshly baked, with butter. A symbol of Lublin and the whole region.
2. Pierogi with Bryndza
Delicate pierogi with sheep cheese — a specialty of the Polish-Ukrainian borderland. They are served with cracklings or sour cream. Bryndza gives them a characteristic, slightly salty flavor.
3. Roztocze Trout
Trout farmed in local farms in Roztocze. Fresh, grilled or from the grate, with horseradish and lemon. One of the best dishes you can eat in the region.
4. Krupnik
Barley groat soup with vegetables and meat. In the Lublin version — with dried mushrooms and sour cream. Hearty, warming, perfect for cold days.
5. Pierogi with Cabbage and Mushrooms
Traditional pierogi, which in the Lublin region have their own specificity — the filling is more spicy, with marjoram and pepper. They are served at Christmas Eve, weddings, and family celebrations.
6. Lublin Chałka
Sweet yeast bread in the form of a braid, sprinkled with streusel or poppy seeds. Popular for breakfast, with coffee or tea. A symbol of home baking in the Lublin region.
