Kuyavian-Pomeranian cuisine is the cuisine of a region where the agricultural traditions of Kuyavia and the burgher traditions of Pomerania meet. This is visible in the dishes: Toruń gingerbread, Kuyavian żur, kołocz, duck. All dishes deeply rooted in tradition and adapted to the region's cold climate.
1. Toruń Gingerbread
The symbol of Toruń and one of the most recognizable dishes of the region. Gingerbread baked from honey, flour, and spices — cinnamon, ginger, cloves. The tradition of baking dates back to the 13th century. It is worth trying it at one of Toruń's gingerbread shops.
2. Kuyavian Żur
Sour soup with rye leaven, served with white sausage, egg, and horseradish. In the Kuyavian version — with potatoes and dried mushrooms. It warms and fills, perfect for cold days.
3. Kuyavian Kołocz
Sweet yeast cake with streusel and various additions — poppy seeds, cheese, fruit. It is served at weddings, holidays, and family celebrations. The Kuyavian variant — with honey and nuts.
4. Kuyavian Duck
Roast duck with apples, marjoram, and caraway. It is served with modra kapusta and dumplings. In the Kuyavian version — with dried plums and honey.
5. Kuyavian Pyzy
Potato dumplings with meat filling, steamed or boiled in water. They are served with cracklings or mushroom sauce. A classic of Kuyavian cuisine, deeply rooted in rural tradition.
6. Pickle Soup
Sour soup with pickled cucumbers, potatoes, carrots, and sour cream. It is served with rice or groats. In the Kuyavian version — with dried mushrooms and dill.
7. Kuyavian Carp

8. Kuyavian Bread
Sourdough bread made from rye and wheat flour, with flaxseed and caraway. Characteristic of Kuyavian villages, still baked in home ovens.
