Lower Silesian Cuisine — Silesian Heaven, Duck, and Dumplings

Lower Silesian cuisine is a mix of Polish, German, and Czech traditions. Find out what is worth eating in Wrocław and Lower Silesia.

Lower Silesian cuisine is the cuisine of a borderland region — Polish, German, and Czech influences meet here. This is visible in the dishes: dumplings, duck, Silesian heaven, krupnik. All hearty dishes, deeply rooted in tradition and adapted to the region's cold climate.

1. Silesian Heaven

A traditional Lower Silesian dish — dried fruit (plums, apples, pears) cooked with spices, served with dumplings or potatoes. A sweet-sour flavor that perfectly complements meat. The dish is also known in Silesia, but in Lower Silesia it has its own specificity.

2. Wrocław Duck

Roast duck with apples, marjoram, and caraway. It is served with modra kapusta and Silesian dumplings. A classic of Lower Silesian cuisine that has graced Wrocław restaurant tables for generations.

3. Silesian Dumplings

Round potato dumplings with a characteristic indentation in the middle. They are served with meats, sauces, and goulash. The secret of good dumplings is the right proportions of boiled and raw potatoes and potato flour.

4. Krupnik

Barley groat soup with vegetables and meat. In the Lower Silesian version — with dried mushrooms and sour cream. Hearty, warming, perfect for cold days. A variant with buckwheat groats is also popular in the region.

5. Wrocław Pierogi

A variation of classic pierogi — filled with meat, cabbage and mushrooms, or bryndza. In the Wrocław version — with curd cheese and onion. They are served with crackling or sour cream.

6. Silesian Krupnioki

Sausage made of buckwheat groats and blood, with bacon and onion. Characteristic of Silesia and Lower Silesia. It is served hot, with mustard or onion. A simple dish, but deeply rooted in the region's tradition.

7. Makiełki

A traditional Lower Silesian dish — pasta with poppy seeds, honey, dried fruit, and nuts. It is served at Christmas Eve and holidays. Sweet, filling, deeply traditional.

8. Lower Silesian Village Bread

Sourdough bread made from rye and wheat flour, with caraway and flaxseed. Characteristic of Lower Silesian villages, still baked in home ovens.

Where to Eat?

In Wrocław, it is worth visiting restaurants on Ostrów Tumski, in the Market Square, and in Nadodrze. In Jelenia Góra, Wałbrzych, and Kłodzko — local inns and regional restaurants. In smaller Sudeten towns — agritourism farms and taverns, where the cuisine is most authentic.
